Its rich pork broth, homemade noodles, and house-smoked pork come together perfectly. The restaurant is also famous for its wide selection of table seasonings, especially the addictive garlic topping.

This is a bowl with serious impact.

Kizunaya

Produced by the Oudouya group, Kizunaya serves an ultra-rich, full-bodied broth topped with vibrant Kyoto green onions.

Every bite practically begs for a bowl of steamed white rice.

Taniseya

A popular restaurant connected to the Musashiya family, often attracting long lines in Tokyo.

Its deep reddish broth is incredibly concentrated. The ultimate way to enjoy it is to soak the large sheets of seaweed in the soup, wrap them around the complimentary rice, and enjoy one of the greatest pleasures an Iekei fan can experience.


Modern and Refined Interpretations

Omoriya

A unique interpretation of Iekei ramen.

Instead of traditional toppings, the bowl is crowned with a mountain of cabbage and bean sprouts, creating a hearty experience reminiscent of Jiro-style ramen while maintaining its Iekei identity.

Koike no Iekei

Created by a Michelin-recognized ramen group, this restaurant offers an exceptionally elegant version of Iekei ramen.

The creamy broth removes nearly all of the typical pork odor, while the low-temperature cooked pork is tender and refined. It’s a bowl that feels surprisingly gentle, even for older diners.


Why Kanda Waizu Is My No.1 Choice

After visiting all of these outstanding restaurants, Kanda Waizu remained my clear favorite.

Even compared with famously rich restaurants like Oudouya or Taniseya, Waizu exists on another level.

The first thing you’ll notice is the soup itself.

The broth is extremely rich and quite salty.

It’s so delicious that it’s easy to finish every last drop—but for the sake of your blood pressure, sodium intake, and how you’ll feel the next morning, I strongly recommend leaving some behind.

Knowing when to stop is part of enjoying great ramen as an adult.


Rice: Resist It or Accept the Consequences

The combination of rich broth, smoked pork, and seaweed practically screams for a bowl of white rice.

Unfortunately, it’s also a calorie bomb.

Since turning 45, I’ve chosen to skip the rice most of the time.

If you simply can’t resist, make yourself one promise first:

Go for a good run afterward.
